First thing that you need to know, the server settings that Apple put up on their support page are for Lion and are incorrect for Snow Leopard users.
Here are the steps to setup Mail on Snow Leopard for your iCloud mail.
1.) Open Mail. It will want to setup for an e-mail address if it's being opened for the first time.
2.) Click Mail -> Preferences and click on Accounts tab, then click on "+" below the Accounts field and make sure that the Account Information tab is selected and enter your account information.
3.) For the incoming mail server text field, type "p02-imap.mail.me.com" and type in your full e-mail address in the User Name field and your password in the Password field, click the checkbox for using SSL.
4.) In the Outgoing Mail Server click on the drop down menu and choose "Edit SMTP Server List..." and put in smtp.me.com, click on the Advanced tab and put in the same information in the text fields and click on the checkbox for SSL. If Mail asks you to save the information click on save and you're ready to enjoy iCloud on Mac OS X Snow Leopard.
If you have any questions feel free to leave them in the comments and I'll try to answer them as best I can.

Hi, thanks for this. Very helpful but...
If you already have a mobile me address, and most do if they have this snow leopard issue, then mail does not allow to create a new account. it says there is already an account with those logins.
Any suggestions ? I'm worried about deleting the existing settings/mail account.
I worked around that by creating a dummy account with a false email address and then amended them further down the process. However, it still does not work and I still get the constant error of 'wrong password'
Any ideas ?
